Since Z390, there is now the option to use the DIMM profile which is XMP II. These settings are not validated, so mileage will vary depending on the kit and CPU.
XMP II timings will be slightly looser depending on the memory kit. If you check within the UEFI or memtweakit, you'll see a difference in memory subsets.
XMP 3.0 refers to the technology’s iteration into DDR5, it’s not referencing any particular profile.
Weeeelllllll...XMP III is supposed to add a 3rd profile along with 2 more custom profiles where you can save your own XMP settings....Links to said info in reply to previous poster. Plus here's another link to an article from October that details the following
"XMP 3.0 will be introduced alongside DDR5 memory modules and increases the number of available factory profiles up from two to three. You can also add two personalized ones."

And this screenshot clearly shows the 3 factory profiles along with the 2 custom you're able to save over and rename
I'm guessing I'll need another Bios update to increase the compatibility with G.Skill DDR5 or XMP 3 in general. It looks like the board cannot tell the RAM is XMP 3.0 otherwise I would at least have the option to save/rename 2 of my own profiles.

It's down to the memory vendor how many profiles they are adding to SPD. Normally the higher the bin, the more likely it is they will give the user options. You can check your SPD profiles within CPUZ > SPD tab.
XMP I remains the profile validated for your board.
