Which drivers to install for Intel hardware?

Which drivers (for chipset, lan, wifi, bluetooth, sata, etc.) to install for Intel hardware: the ones from the support pages for each respective mobo or use the Intel® Driver & Support Assistant (Intel® DSA)?

https://www.intel.com/content/www/us/en/support/articles/000031572/programs/intel-corporation.html

"As of November 2018, driver updates for Intel products on these operating systems will begin transitioning to Windows DCH Drivers. After a driver has been updated to a Windows DCH Driver, it's possible to roll back to a legacy driver; however, rolling back isn't recommended as it involves a complex process that could result in system instability. This system instability is especially pertinent to graphics drivers. You can find more information on this subject."

I see that drivers are being published on the mobo support pages well beyond November 2018.

I use Intel's drivers for my Maximus XI hero-wifi via Driver & Support Assistant. Readily notifies you when updates are available. Asus seems to always be late to the game updating Intel available drivers and the asus update sucks (armoury crate etc).

And this does me firmware, Mei drivers, etc the whole lot? Is that a program you install?

go here and it installs the non invasive program, web based. It will scan your system and tell you which drivers are outdated and you can download the new driver there.

Mokichu does a good job of posting new drivers on this section, and winraid forum also has them when they're released.
