Currently have Intel Core i7-7700k 4.2Ghz installed. I will have to upgrade to windows 11 soon. What CPU can I fit? Checked thw Windows 11 list against the Asus kist and no matches. I have 5 SATA SSD and 1 PCIE SSD. This machine is used for gaming and FL Studio DAW. I am considering a whole new machine but would like to avoid the data migration involved with a clean install of Windows 11 on a new machine.

The i7-7700K is the best cpu for Z270.
Some ASUS Z270 motherboards support windows 11, some do not.
Fortunately, yours made the list.
Go into the bios, Advanced tab, PCH-FW Configuration, enable PTT to support windows 11.

Thanks forthe help. The i7-7700k is not supported by Windows 11, that is my actual main problem. What should I replace it with before installing Windows 11 to avoid a significant drop off in performance? I will be using a vacant ssd to facilitate a dual boot so a clean install in these circumstances is not a problem if I can get a compatible cpu.

Please note that this motherboard has no driver support for Windows 11, therefore regardless of any CPU or TPM module that may be installed, it will unfortunately not be compatible with Windows 11.
As for enabling secure boot, please navigate to the Boot tab, then to 'Secure Boot'.

The list in my first post are ASUS Z270 motherboards that support windows 11 and the i7-7700K. I was using the ROG Maximus IX Code (Z270) motherboard and i7-7700K with windows 11. Performance from windows 10 to windows 11 is virtually the same.
If you can enable the PTT setting in the bios, you can install and use windows 11 with your ROG Strix Z270-H Gaming motherboard.
After enabling PTT, you can run the PC Health Check to show that your eligible and ready for windows 11.
