Cpu power question

I am going to use the corsair 900d case with the Maximus viii extreme and the case comes with a splitter that turns an 8+8 cable into an 8+8 and a 4+4 and that will fit perfectly on the motherboard. But I am using custom psu cables from cable mod and the kit comes with two 4+4 eps cables. Could I plug the two 4+4 cables into a single 8+8 and will it work/be safe?

Are you planning to connect the 4+4 EPS cable to the 8 pin power header, right? If that's what you meant, yes it will work.

Or will one 4+4 be enough because the extreme has one 4+4 and one 8+8

The R5E has a 8 pin and 4 pin power header. The 8 pin header should be populated at all times. The other 4 pin header is optional but if you have the extra cable, do connect it to the header.

In this picture are the two plugs that would go into the mobo. Now let's say the two wires join together where it's cut off and they join into a single 8 pin eps female. Could I plug two 4 pin males into that female and would it be enough power. When I say can I plug them in it I also mean will they fit.

The 4+4 connector should snap together to make the 8 pin, please don't force something together, as Chino said the 8 pin is a must, whether it is an 8 pin, 4+4 pin that id designed to connect as one 8 pin doesn't matter, a lot of power supplies have the 8 pin connectors that can be spit into two 4 pin connectors
The picture you attached looks like an 8 pin and 4 pin, it that is from your power supply you are good to go, you can find this information in the manuals of your motherboard and power supply, if it's urgent, read them
