I think PS5 that will control your HDR settings for the monitor,  You could try PS5 settings Selected Video Output  Adjust HDR by going in screen and video

Thinks same happens with my monitor think it because once you turn HDR on the computer that will control the settings and once you enable it then HDR settings will come on monitor and you can change it to custum!
