To fix my GSkill RAM not detected, I had to uninstall AC, restart PC, download the stand-alone installer for AC, Install AC with the full package and then let it update after that. Hope that helps you. After one of the updates, my RAM stopped working...
I also have a crosshair x670eExtreme bios 1709 and ac vs. 5.7.3.0. still has the fanexpert error s-1001. i have reinstalled ac, restarted pc, done a windows reinstall.
