Model : ASUS TUF Gaming A15 FA507NUR_LP082W
Processor : AMD Ryzen 7 7435HS
Memory : 16GB RAM
Graphics : NVIDIA GeForce RTX 4050
I bought my laptop on 21st November(yesterday) and when I turned the laptop on I found it a bit laggy, but I thought it'll resolve itself with driver updates. I checked on refresh rate checker sites (UFO test) and it indeed was at 60hz with minor browser stuttering even though it was 144hz in the display settings.
It eventually came to 144hz after 10 mins and stayed there, but when I shutdown and used it later in the day it booted and was at 60hz again when I checked on UFOTest, this time it took longer to come to 144. I'm scared as it's only been two days, is this normal or is this an issue?

I can't see the ultimate mode in AC, apparently since there is no iGPU in this one the GPU mode doesn't exist

It sounds like a software or driver issue, as the refresh rate should stay consistent once set. Try updating your graphics drivers and checking for any BIOS updates, as these can often resolve refresh rate problems.
