I'm considering buying a ROG laptop and I'm wondering about its heavy gaming performance. Can anyone share experiences regarding the different models? How do they deal with heat and noise during intensive use?

Heat and noise will vary depending on your luck with the liquid metal/thermal paste application. If you're somewhat lucky and/or know what you're doing with undervolting you can have decent temps (talking 80 and under in most modern games at max settings). But you'll never get around the noise when gaming on max settings in modern games, so you kind of have to go for headphones to be honest.

I bought a Strix SCAR 18 (Intel Core i9, 32GB RAM, RTX 4090) in January.

It is VERY noisy when gaming. Sounds like a jet taking off. When not under load it has some minor but nonetheless annoying (for me personally, at least) amount of coil whine. Definitely noisier than my previous ROG laptop (ASUS ROG GL702, Intel Core i7, 24GB RAM, GTX 1070).

It deals well with heat. No issues there (probably because the fans are working so hard all the time, lol). Definitely cooler than my previous ROG laptop.

I always play whilst wearing a very good set of noise-cancelling headphones, so none of this is a problem for me. Without the headphones, though... not a pleasant experience.

As far as performance goes, the machine is a beast. Truly beautiful screen, too.

Hope this helps.
