everything you are asking SHOULD be do able by a 1080. just keep in mind with multiple games its going to need a lot of CPU power so make sure your CPU isnt going to tank you entire system. I would hope you have an i7 4th gen or higher. the 1080 is a monster. it won't have any issue displaying 4 screens at different resolutions AND hz. All you do is go into the Nvidia control panel and set them all to whatever you want them at. As long as you aren't running BF1 on the 279q and gears of war 4 on the UHD both at ultra you should be fine. I would say just keep checking out the update summarys for nVidia drivers so you get an idea of whats being fixed and also search up how other people are running their setups with different monitors. 4 years is a long time for new things to come out.

I haven't tried 100hz. I'm not sure what you mean by lagging at 60hz. are you talking about the fact that its not as smooth as the 144/165hz? I can notice a huge difference between the 60hz and 165hz for sure. I haven't really compared 100hz to 165hz.
