Games like FIFA doesn't work well with uncapped fps...so the best option (without micro stutter) is to leave everuthing uncapped on the game settings and in the Nvidia CP put g sync and v sync on.
It is a bust but true.

GSync doesn't cap the FPS. For that you use VSync. Or use Fast VSync to have uncapped FPS without tearing. What you've just described is how it is supposed to work.....I think.
