So I know I want a G751JY because of the 980M. But there are lots of subtypes like G751JY-T7230H. Is there a list of these subtypes? It would make it easier to search for the best prices if I knew exactly what to search for.

No because many of them are for specific regions only and a few are for specific vendors in specific regions. There is no master list the only reference you can find is on Asus.com of your region.
