Corsair Vengeance 3333mhz Ram issues

Hi all
After setting XMP in the bios (updated to version 1102) and rebooting, I have found my I9 7900X is throttling to 3600mhz max boost speed.

Checking back in the bios with xmp applied, the board auto overclocks CPU STRAP to 125 and BCLK FREQUENCY to 125.0000.
I then applied XMP again and manually set CPU STRAP to 100 which also lowered BCLK FREQUENCY TO 100.000 and lowered my ram speed to 2600mhz.
I then tried to manually set the ram speed to 3333mhz but was unable as there isn't a manual option for this speed.
So i then set it to the closest available which is 3200mhz.
(I have also set the auto cpu core voltage to a negative offset of 0.023 which gives my cpu a max voltage of 1.25.)


After rebooting my pc again, my I9 7900x now boosts up to 4.5ghz and my ram is running at its xmp settings but with a 3200mhz speed.

Why is there no manual option for 3333mhz ram speed?
Why cant i set my rams XMP IN BIOS, without affecting CPU STRAP AND BCLK FREQUENCYS?
I have recently upgraded from z270 maximus ix hero/ i7 7700k combo, and am finding the X299 bios and the I9 a bit baffling to say the least.

Any help or advise would be great.
