[Help needed] Issues OCing 7700K to 5ghz

Hello,
I hope you don’t bash me since I’m new but I’m genuinely here seeking help from people with experience.
I stumbled upon a ton of posts regarding 7700K OC/stability/temps. And that's why I decide to discuss it here seeking help. I'm going to try to keep it simple and short, but if it's a bit longer than expected its cause I want to be as much detailed as possible, so I'm sorry in advance. Please note that I already read the Kaby Lake OC guide posted here and Asus’s guide as well.
My build:
• Windows 10
• Corsair vengeance c70 case (cooler mounted on top x2 exhaust, x2 fan front intake, x1 fan exhaust)
• Asus z270e (BIOS updated to the latest)
• i7 7700K (default speed)
• Crosair H115i cooler (Performance settings on pump)
• Mx-4 thermal paste (pea size)
• 8gbx2 Crosair vengeance ram 3000
• Asus strix 1080ti OC edition
• Corsair RM750i power supply
• Asus PG279Q ROG monitor

1 month ago situation:
I almost own the system for a year, but barely used it for heavy loads due to IRL
Heat spikes up to 90c running Apex legends (not streaming even though I want to)
Voltages shoots up to 1.3v, but averages around 1.25.
Idle around 30c (ambient: around 25c)
Fans go crazy up and down, until I pushed the upper limits to 95c with AI Suite to make things more bearable. They used to go crazy when I minimize stuff sometimes, but I read its normal behavior which got them fixed through the fan control.
I know that the 7700K is a hot chip and the toothpaste Intel placed inside is horrible, and deliding is probably the optimal and most effective solution for my issue I thought. However, I'm noticed a huge spikes in temp up to 90c on the stock speed and I seemed its way more than it should be since the highest it goes seems to be 80c as far as I concluded from all my reading on the net. I had XMP profile enabled in BIOS and that's the only change (I did this cause the default auto runs it on ~2000mhz instead)
I tried remounting and reseat the cooler with a new thermal paste application, but with no luck.
Current situation:
I ran the system on 4.7ghz @ 1.26v (set manually), RAM @ 3000MHz,1.353v[15-17-35], LLC 5, CoreEnhan off, vccio&vccsa=1.20
I ran a test before moving and deliding my CPU, results can be found https://we.tl/t-8u76Rfs1yw .I used IBT 30 passes to produce the results just as quick test of stability/temp of a simple OC and nothing more. Results for the same test after delid can be found https://we.tl/t-eu5dLA6BOF . First I would like to know if the delid was successful? Cause I paid a person to do it for me who already had the tools and everything. He used liquid metal thermal grizzly conductonaut AND permatex ultra black rtv silicon to reseal.
I noticed a drop in temps, but when I compare them to what I written in the ASUS guide they seem so much off it makes me doubt the success of the delid. Also note that SA and vccio is giving different values than 1.2 on average. Vcore doesn’t average on 1.26 even with LLC 5.
I’m run test under 100% fan speed to get the best possible thermal results. Usually liquid temp is around 30c.

What I tried so far is to follow the ASUS guide, but my system BSOD using 1.3v on adaptive. So I moved and tried the below.
Sadly after trying various voltages and frequencies, I couldn’t reach 5ghz at all starting from 1.33v ending 1.39v (didn’t try 1.4v). Please check the details in the table here
I was advised to set CPU/Cache current max with LLC 7, but from my reading LLC 6 is the highest a person should go and the CPU/Cache was supposed to be irrelevant as stated in the guide. Trying that cause the voltage to shoot up to 1.41 average on a RealBench 2.56 with temps of spiking to 80c (mind you this is a delided chip).
I would love to OC the chip, that's why I bought it in the first place (even though I have almost zero experience). I stream and do some video encoding, and love to play my games on "high" on 2k and don't want the temps to hold me back just cause I’m ignorant. Would appreciate your input and help to troubleshoot the above. Please don't hesitate to ask me for any screenshots, readings from specific software or any sort of extra information that I might have missed.

You are u using the stock fans of the H115i? I did have that cooler and i send the it to the trash. (the fans no the cooler)

Yo do not need adaptive voltage with 7700k. idle temps are ok.

I did have 7700k oc to 5.0 1.29 24/7 no issues. untill my aio was damage. i get that cooler and WAS AS BAD as ..... in a party. Fans are so bad. you can change those and use bios to control the fans. (turbo)

Just follow the link tutorial by the letter.

I did exactly what that guy did in the tutorial. I BSOD on Windows start up.

As for the fans, yes i'm using the stock fans.
