I have auto overclocking turned on for my system, and it goes as high as 38% and rarely has a problem. But because it's set to auto, sometimes it tries to go higher than 38% and I'll get a BSOD within a few minutes of doing anything, even just browsing the web. The system will reboot, sometimes go back to 38%, or 39-41%, etc. and keep rebooting until it gets back down to the magic number of 38%.
Question is, is there a way to lock it at 38% so I don't have to worry about this any longer.

Been a while since I've used Coffee Lake systems, but you should be able to reduce the optimism scale within AI Tweaker.

Thank you for the suggestion. I have changed it to 91 instead of 100 and so far so good. What's odd is that I could not find this in the menu system or in the manual. But when I searched for it from within the BIOS it appeared. Was I just not looking in the right place or is searching for this field the only way to make it appear?

No worries: I think it’s under AI Features on Extreme Tweaker but perhaps not on Z390. Glad it helped regardless.
