SA volts are on the upper side of where I'd want to be too but OKish
At the end of the day one CPU may last forever at those volts and another degrade quickly....all you can do is think that lower is better in general, to avoid current degrading things...
If you are looking for longevity, Intel speedstep is a seriously nice feature...something that 125BCLK will take away from you...
3000MHz is very doable on 100strap... and this, combined with adaptive voltage will give you good turbo performance but drop clocks and volts when you are not taxing the PC
I'd try 100 BCLK....find voltage for 4.4GHZ core...will be about where you are now...plug that into adaptive.....leave cache at auto and set up RAM manually if XMP is changing to 125 BCLK....
