Each of the fan channels has different control methods. The CPU_OPT is slaved to CPU_FAN, which is useful if you have two (or two sets) of fans on a water cooler. These always run, unlike the CHAssis channel which can be set to turn off below a certain temperature. I love this feature since I can turn off my GPU exhaust fans when they are not needed.
The OPT channel is a bit different, you cannot control these through FAN Xpert, however they have profiles in the BIOS and they are optionally slaved to the matching OPT_TEMP inputs. This is pretty cool, but, they cannot be turned off, and the fact that you can't access these through Fan Xpert is really annoying (though it will show the RPM readings).
There are also additional fan headers on the ROG panel but I have no experience using these.
