With your H100 practically is impossible to get a 5GHz OC on the CPU... simply, the H100 isn't enough for that heat... if you have very good airflow through the H100's radiator, but I mean really good airflow, maybe you could do 4.8GHz... sincerely, for a 24/7 OC, I would stop at 4.6GHz...
I could post some snapshots of my BIOS settings, but the thing is that every CPU is different... I think, mine is a little degraded already as I used very high voltages during benching... if you really want to learn OC'ing, I would advise you to start reading the stickies on this section...

Its not just Vcore you need to adjust to stabalise a certain overclock on Z77 VCCIO, PLL , VCCSA etc etc etc are all important especially as you come to the limit of your cooling. As are all the settings in Digi Power and the DRAM timings and settings too.
Ideally you should learn your individual system by initially reading one of the sticky guides and making small changes and see how each one effects stability.
For overclocking I would leave Speedstep on and if you want the CPU running at full speed all the time adjust the OS power plans.

Its not a bad clocker at all they are just limited by your cooling and the actual chip its self. Some are better than others but thats true for many CPU these days with IMC etc now being on die.
