If you're using the motherboard's RAID controller, then you're probably going to have to reinstall after you build the new array - I have no idea how you could migrate from a two disk array to three without destroying the old data.

I have tried to image a disk for a similar type of RAID migration with Windows 7 Pro, but it didn't work and I ended up having to reinstall anyway.

is your OS installed on the raid? Either way, I would image or make an iso of the current data on the raid. After verifying that all your data is present on the image then just install your 3 drive array. If it doesn't work, you can still just copy the data from your image to your new 3 drive setup. This should be pretty easy for you to do... just takes some time.
