It does all depend which 750W PSU.

And of course just how crazy are you going to overclock your graphic cards.

But most of the time that will be fine if a reputable brand.

I'm using Cooler Master GX-750W PSU, and i intend to use dual SLI with Gigabyte GTX580 3072MB.

Dude, johnyguru blasted that psu, said it was a pos....but in a nice way. Now dont take it personal, hell i just upgraded from that exact psu a few weeks ago. The thing was starting to just shut the pc off with no warning....which is a warning in itself if you think about it. It didnt even make its 80+rating also power ripples and ... the list goes on. In forums i would say the name of my psu and the card i was to oc with (matrix platinum) and people would laugh and were surpised id not blown all my parts up yet with that psu.
Here is the link for johnyguru and his review of the GX750w psu.
http://www.jonnyguru.com/modules.php?name=NDReviews&op=Story5&reid=188 read for youself if you want.

Now after reading that would you trust BOTH your expensive GTX580s to it. If your not going to oc the cards a quality 750w is fine. The ROG Matrix Platinum when overclocked and overvolted will eat 650w (whole system), you want to put to cards on that powersuppy.

Now with that said, if i had to id do it.

There are most certainly some concerns about the CM 750 and the electrical efficiency of the unit when under extreme load. I would suggest being a little cautious and rather err on the side of discretion.

With two top end 580 cards those are the SOC cards are they not? and the possibility of over-clocking them very likely I would plumb for a 1000W PSU in that case.

See being on this topic, I was considering doing a SLI on my Asus GTX 580's. My PSU is a Seasonic X-760, and I have heard great things about these PSU's, but I don't think it would be enough.....

If so, I risk burning the 580s due to the instability of this PSU?o.O

you means one like this : I can say only good thing about the AX serie, everything is modular, even the 24 pins cable, usefull if you want to swap the PSU for a bigger model or whatever, the Power cord is heavy duty, the packaging , wowwwwwwww , even a velvet bag , lol , they make smaller unit, not sure the OP need 1200 w

look at all the cable. all black it help to make a clean install

No one here can say that with any degree of absolute certainty. What we are saying when it comes to two top end cards, do you really want to find out?
