The 6600k won't bottleneck a 1080 TI, the new kabylake cpu's are a skylake refresh and all you're gaining is clock speed.
Overclock your 6600k and you basically have a 7600k.
The 1080 Ti is a good choice for a 1440p 144Hz monitor and with maximum game settings you still probably won't reach 144 FPS in most newer games except for DOOM 4.
