I plan to install four Western Digital 8TB SSDs in M.2_1, M.2_2 , and two more in the DIMM.2 (the card by the memory). Can these all be Raided together and seen as a single drive? If not, can at least three be seen as a single array?

All of the slots I filled with drives showed up:
M2_1
M2_2
DIMM1&2
and (2) SATA HDD's as well.
So, I don't believe you'd have any issue with the M2_3/4 slots filled in as well.
I was hoping the MB/CPU RST/VDM would finally be a little better vs years ago.
I did a whole bunch of testing with it in RAID0 & 5 vs Storage Spaces in Win11.
For my need I went with Storage Spaces as less CPU , consistent as well , and if computer issue easy to pull and put into another MB or even USB expansion and array is back up. So far 3 days in, it work good with zero issues even with hard resets during writing to verify to some extent.
My quick summary of quick tests. I did more extensive with other tools as well but this will give you a general idea for whatever its worth.
I'd suggest doing your own setup and testing of both if your running Windows.
