Most stable bios will be the bios version running in your current setup. If it stable, try not to update bios. One person meat is another person poison. Unless the bios version specified certain fixed pertaining to performances or you want to try and hope for the best it work sudden wonder to your system speed, then upgrade to the latest and hope for best. New bios release will fixed issue but will also lead you to another problems. Unlike the previous bios version, the latest version of bios 2004 will not allowed to roll back to previous version have cause quite a stir in this forums. Having said all this came from my experiences.
The choice is yours.

thx
so this also means that for me to run 64gb ram 4 sticks of 16gb ddr5 6000mhz it will default to lower frequency . as i have seen many videos where ppl are turning up the voltages etc which is strange for xmp to work properly.

Same board and processor here. Memory is 2x 16GB Corsair 5200MHz.
I started in April with a new build and BIOS 1403 (I think), then 1505, then 1601. All perfect for me with XMPI. Then 1720 was released with a lot of problems, so I ignored that one. Then 2004 came out which seems OK for most people, but some RAM stability issues reported (well, other issues too, but on balance I think it is probably OK overall). Anyway, like ahfoo said, you can't roll back from 2004 so I haven't risked the upgrade myself. I was tempted, but in the end decided why take the risk? I might do the next upgrade if people seem happy and rollback is possible to 2004. At least there will then be 2 versions available to try in theory.
So, I'm still on 1601 and very happy with it personally. Again, like ahfoo said, why upgrade if all is working fine? I would say the exceptions would be if an important security fix is needed or if you are planning to change to a later processor.
