Yes, I'm removed it before and nothing bad happened. You can set the fans manually in the BIOS easily if that's your concern - at least fans that are connected to the motherboard headers. Otherwise, alternative free fan control software is available. So just try a reinstall and see if that fixes your memory problem.
The main reason I still use it is because I have a few LED strips connected to the ARGB headers and I can set those to respond when I play music. For drivers, I do that manually from MoKiChU's threads.

That doesn't sound right. I use Armoury Crate and have never seen memory usage like that. There is a tool to remove Armoury Crate on the support pages. I think it would be a good idea to remove it, see if you miss anything and then if you still want it, do a fresh install.
Removing it should not cause any instability, but if you need things like fan control, you can do that in the BIOS anyway.

you're right, my fear is that then I don't know how to set for example the fan control inside BIOS, and that for example the fans stop altogether... does anyone have experience with the removal of armory crate? and in the bios setting post uninstallation?
