On the back of my asus Intel Z690 TUF GAMING Z690-PLUS WIFI D4 motherboard i have 2x usb 3.2 gen - my question is will it be ok to use these for a external hard drive and a usb 3 hub ?

There is a Z690 forum, just in case you did not know.

Click on the PC Components and select the forum.

Otherwise, it should be OK but hopefully you have a really fast external drive.
