I have recently purchased the ROG STRIX Z790-E Gaming WIFI motherboard. This board sees all my drives listed under "Storage Information" but none of them are listed under the "Boot Priority" . This is now my second Motherboard. The fist one I talked to ASUS tech support and we updated the Bios and ran through all the settings. Finally the Tech decided that I had a bad board. I got in the replacement board and I am having the same issue. There are 2 M.2 drives connected and 1 SSD drive and 2 WD 1tb drives and 1 Blueray / DVD drive connected. All of which are listed under the Storage Information section but none are bootable or listed in the "Boot Priority" section. I feel this has to be a setting in the BIOS. This is the second identical motherboard with the same exact issue. Unless Asus's quality has gone way down, this has to be a simple fix everyone is over looking. Here is a picture of what I am seeing. I currently only have the SSD and the Blue/ray drives connected. I have been trying different combinations of drives. I should note that if I insert the USB stick it pops up in both locations.

I'm using only one ssd in my ROG Strix Z690-F Gaming Wifi motherboard, but as I recall, the ssd didn't show up in the boot list until after I installed windows. It shows up in the windows installer where you're able to format it and such.
I can't say for sure about your other drives, but after you use disk management to assign them a letter, they may show up in the boot list.

The SSD listed in the "Storage Information" has windows 10 on it and I can pulll it out put it back in it's original machine and it boots right up. Also the optical drive should be bootable since it could be used to install the OS as well.
