new pc build help with ram on maximus hero x

Hi guys, well its that time again where i need to upgrade and im stuck at what ram to use so reaching out to you guys for help.
this is what im planing to get in sales over weekend,

ASUS ROG Maximus X Hero
i7 8700k
ASUS GeForce GTX 1080 8GB ROG STRIX
or the ti if funds allow
ASUS ROG-STRIX-GTX1080TI-O11G-GAMING GeForce 11GB OC Edition

now this is where im stuck..WHAT RAM should i get, i assume from reading DDR4 3600 2 x 8gb = 16gb or maybe 32gb but which one is the million dollar Q...

i will be throwing this into my fractal R2 midi powered by corsair RM850i using current ssd etc..
if funds allow i might splurge on a nice m2 drive so any thoughts on this would be great also....
anyway thx in advance and look foreward to your advice guys ...

My current cooler is corsair aio h100i or 110i so what thermal paste is now recomended and is current cooler still pretty good on these new coffee lakes. ?
