As to what memory I would say anything that is Samsung b-die rated @ 3200 should be good. Total ram is up to you.

1060 won't bottleneck your system, not the fastest graphics there are some encoders that use cuda cores (so manbe upgrade in the future if you find using it as well)
I would be using M2 Nvme drive on this as your primary OS drive, programs and even working files.
