It has been two months since the last update...
Welcome to ASUS, they are #1 in procrastination.
We won't see any update in the future months, that's their policy. If we will be lucky, maybe, we will see a new firmware this fall.

Yes, I have internet disconnection issues on both 5 GHz and 6 GHz (much more often on 6 GHz) with both the S24 Ultra and iPhone 15 Pro Max. Additionally, DNS over TLS doesn’t work if the IoT network is turned off.

You went a little over my head regarding the DNS over TLS, but the IoT network is for less secure devices. Perhaps some component you are using for this, is not capable of using higher security.
Do you have your system set up with MLO enabled? Are you using Smart Connect? You iPhone does Wi-Fi 6e, but not Wi-Fi 7. If you have MLO enabled, and the S24 Ultra does Wi-Fi 7, you may see indications like the one below. The attachment came from a Windows 11 Desktop system running the Windows Insiders version.
Do these disconnects happen when you have a strong Wi-Fi signal?
If you wanted to check your log, each radio has a specific identifier. If you take the MAC address of that radio, you may be able to follow it through your log.
I still have a small problem that needs to be addressed, and that is a non-WPA 2 device being allowed on the IoT network and then kicking my home alarm system, which is WPA2, off the IoT network. I am running the Pro version of the router.

I don't use MLO at all, as it is very buggy at the moment and doesn't provide any latency improvement for me. I also don't use smart connect because I like my bands separated so I can have finer control myself.
I knew iPhone only supports Wi-Fi 6E, but that's not very relevant to the issue, as it can connect to the 6GHz band but uses 160MHz rather than 320MHz and 1024QAM rather than 4K QAM, if anyone cares about that 🤣. And yes, it occurs a lot more often when there are obstacles between the client devices and the AP. It can also occur when the signal is strong, but it's a lot less frequent.

Yes bro, I also got a new Router (hardware revision 2.0) and WAN2,5 still doesn't work as WAN.
This is the WORST router ever.
