The Error message is
"The local Bluetooth adapter has failed in an undetermined manner and will not be used. The driver has been unloaded."
And that's it.
Disabling/enabling Bluetooth in the BIOS Onboard Devices section doesn't make any difference. Bluetooth no longer appears in Device Manager in the OS.
I've tried reinstalling the Wifi driver, which picks up the downloaded driver from the Asus Support pages here, but Bluetooth remains unavailable. I've never seen such a thing in a new PC and I still don't know what happened to make it stop working.
I know about this post and followed those instructions, but when I try to load the suggested drivers, Windows says they're already installed and working fine. And still no Bluetooth. The external wifi/BT antenna that comes with the mobo is screwed in and was working correctly.
The only other thing is that there's also a USB device working incorrectly, which happened suspiciously close to the Bluetooth leaving the room:
"Windows has stopped this device because it has reported problems. (Code 43)"
"A request for the USB device descriptor failed."
Any help appreciated. I have a spare Wifi6/BT card but ... this is a brand new board in a brand new PC!

After checking the version you provided, it appears that it does not exactly match the ROG STRIX X670E-A GAMING WIFI official website.
Could you please go to the official website > support > Driver & Utility > Driver & Tools > select "Windows 11" and try installing the AMD Bluetooth Driver V1.930.0.257 For Windows 10/11 64-bit released on March 17th, 2023, or the Intel Bluetooth Driver (AX210) V22.190.0.2 For Windows 10/11 64-bit released on March 7th, 2023, and confirm if the issue persists?
Please also refer to [Notebook/Desktop/AIO] Troubleshooting - How to fix yellow exclamation mark in Device Manager if needed.
If the error still occurs after installing both versions mentioned above, kindly provide a "screenshot" of the error message along with the following information.
- the OS build and the image of Onboard Devices Configuration> Bluetooth is [ENABLED] of BIOS
- the brand and model name of the CPU, GPU, RAM, and PSU currently installed

So looking further into this, it seems that ALL of the BT drivers are incompatible.
It calls itself a MediaTek Wi-Fi 6E MT7922 (RZ616) 160MHz Wireless Card in Device Manager, but all of the following are found to be incompatible:
AMD_BT_V1.723.0.164_WIN10_WIN11_64-bit (which contains mtkbtfilter.inf) - " ... folder you specified doesn't contain a compatible software driver ... " etc.
BT_AMD-MediaTek_v1.1033.0.304 (which contains mtkbtfilter.inf) - " ... folder you specified doesn't contain a compatible software driver ... " etc.
DRV_Bluetooth_AMD_RZ616_TP_W11_64_V19300257_20230317R (which contains mtkbtfilter.inf) - " ... folder you specified doesn't contain a compatible software driver ... " etc.
So neither the AMD/MediaTek or the Intel drivers work.
What exactly have I been sold here please ASUS?
I could use an alternative working Ubit Wifi 6E Bluetooth card I have spare, but is using a correctly functioning Ubit (aka Yunma Tianlong International) device over your hardware really the solution?
Or is this going back in the box to PCSpecialist.co.uk? If it is, that's the first and last time I make the mistake of buying ASUS.

May I ask if the situation you described happened after any changes were made? For example, updating the BIOS or connecting an external device
What is your current operating system version? Have you downloaded the corresponding Bluetooth driver?
Did you choose to run the AsusSetup executable file to install the Bluetooth driver?
Please refer to the steps in [Motherboard] How to download and install LAN driver from ASUS Download Center to install the driver.
Also, could you provide the current BIOS version you are using?
Please go to BIOS > Advanced Mode > Onboard Devices Configuration > Bluetooth Controller and confirm whether it is set to [Enabled].
We recommend performing a clear CMOS and then checking the Bluetooth functionality again to see if the issue persists.
If the Bluetooth feature is still unable to function properly, please provide a screenshot of the error message and, if possible, a complete recording of the installation process and the issue you are encountering.

No, no changes were made. It just gave up one day after working for about 2 weeks.
The BIOS version is 1415.
As previously, in Onboard Devices Configuration, Bluetooth is [ENABLED].
Tried clearing the CMOS, no difference.
Error messages are:

I attached my spare Ubit Wifi 6e PCI board and that works perfectly. Now, in Device Manager, next to the failed MediaTek device, I have this:
You can see the correctly working Ubit device "Intel(R) Wireless Bluetooth", and the failed "MediaTek Bluetooth Adaptor". If I try to install any other drivers, I get a bluescreen on reboot and then the same in Device Manager.

I had to install it twice - once and then again after reboot, but after disabling my Ubit Wifi 6e PCI board, the MediaTek on-board device works and no more bluescreening.
