Hi,
I use Asus Armoury Crate to control the fans, but in the past when I wasn't as lazy, I custom control them in the BOIS.
Its too much to type in here on using the BIOS, but if you search on YouTube I'm sure you'll find lots of useful information.

Use Armoury Crate Fan Xpert or Q-FAN in the UEFI.
I tend to use Q-FAN to reduce system overhead in the operating system.

In have downloaded and installed Armory Crate and have ASUS folders in "Program Files" and "Program Files (x86)", both with many sub-folders, but I have no idea what to do with them!.

QFAN is not available in Armoury Crate, it's a UEFI feature (BIOS).
If installed Armoury Crate should already be running. Check system tray
Then click the Device button on the left side menu reel and go to Fan Xpert.

I see nothing looking like this in Device Manager. I believe that I have done something wrong in the install of Armoury Crate. I would like to uninstall it and try again. I see no "uninstall" procedure with it so can I just remove the two ASUS folders and try installing it again? Is there anything else which should be deleted to give me a clean start?

Why are you looking in Device Manager? Perhaps you should get a system integrator to look at this for you.

Download the uninstall tool from there, unzip it and the run it. It'll remove the Armoury Crate.
Then download Armoury Crate from here: https://rog.asus.com/uk/armoury-crate/
Again, unzip, in install. Takes a while with a couple of restarts.
Then go to start, and find Armoury Crate in your list of programs. Launch it. You'll see a number of icons to the left and of the screen, press 'i' (see attached photo)
