i was wondering about how i would deal with the required 3 pcie connections for the gpu since my psu only comes with 2 pcie cables with pigtail connections, any idea on how i can get around this or if i would need to get a new psu.

You'll want to get a new psu and use three separate pcie cables with the adapter, or a psu that has a 12VHPWR cable.
ASUS recommends a minimum of a 750w psu, you can go up to 800w -1000w to give more headroom if you like.

There are different tiers from bronze to platinum, with platinum being the most efficient.

I will probably get a new Corsair psu which does provide a 12VHPWR cable, would it be fine to use for a while with the 2 pcie cables and 1 pigtail until I can make the switch or would I be killing the gpu?

I wouldn't do it, it will most likely be unstable and possibly damage your gpu.

I was thinking of the Corsair rm850e 2023, would that be a decent overall psu?

Sure, that would be an excellent choice, it comes with a 12VHPWR cable.
