Here are a few commands you can play with to get your setup running smoother.
Use the tilde key next to 1 on keyboard in game.

RenderDevice.TrippleBufferingEnable 0 - (Enables triple buffering if set to 1)

Render.perfoverlayvisible 1 - (Shows the performance overlay)
The performance overlay is helpful for adjusting your renderahead limit. Rendering to many frames taxes the cpu pretty hard and you should be able to see it on the overlay. I found that with 3 7970's and my cpu renderahead limit of 1 gives me the smoothest game play. Mess around with the setttings until you find a combination that works for you. Also limiting the fps + or - a frame or 2 near your refresh rate can move the tearing so it is not visible sometimes.
Here is a few quick video clips I recorded of my son playing. As you can see the tearing has been eliminated for the most part unless I just can't notice it. Sorry for the poo quality recorded with my Iphone.

Also each game is a little different, some take a little more time to get setup correct. But yeah, vsynch is sometimes a nightmare to get working smoothly in games. I will post my settings when I get home from work.
I did some testing in game:
With Vsynch enabled and trifinity enabled the graphics were jerky but synched. Disabled trifire and run one card and vsynch worked fine.
I messed with some of the setting I posted above and was able to get the game smooth with trifinity and vsynch enabled but mouse lag was terrible. If you look at the performance overlay with crossfire,eyefinity and vsynch enabled you can see the graph going crazy. You disable vsynch and it smooths out.
Settings I am using are renderahead 1, no vsynch, rest of the settings ultra, using in game 2xMSAA. I get no noticeable tearing with vsynch off. What Monitors are you using BTW?
