So on some games like the Anno 1800 title screen when the music is playing I get crackling, same with speech when playing MW2 (the new version).
I thought it was a mainboard fault so bought a new board, same model and the exact same issue is there.
Latencymon seems to indicate an issue but each time it does its a new file causing an issue so doesn't seem to be tied to any one thing.
Anyone else have audio crackling/popping? No idea what it could be at this stage. Doesn't happen when watching youtube or playing songs etc

Well let's start with the basics of what's going on.
What type of audio device and connection are you using? E.g.: headphones? Wireless or usb or 3.5mm cable plugged into your motherboard?
Speakers? What type of connection? HDMI/DP Port? USB? Blutooth? Externally powered?
Have you tried using your audio device on something else and confirmed it doesn't have issues itself?
If that isn't the culprit, you should consider updating your drivers and your bios to the latest version, especially if you have usb audio devices. Doing so would be highly recommended and may solve your audio issues.
Onboard audio driver:

Scroll down to - Realtek Audio Drivers (UAD - ASUS ROG SS3-DTS) as its for DTS Sound Unbound motherboards:
Follow the instructions and install the audio drivers.
Next, update your motherboard drivers, follow the link below and choose your version of windows and download the AMD Chipset Drivers:

I would recommend also updating your bios if you are comfortable with flashing and updating it. You can always create a backup of your current settings onto any one of your drives or preferably your usb thumb stick within the bios before you flash it. Assuming you set it up or had someone set it up. If you don't feel comfortable, or don't know how, skip updating your bios.

ROG STRIX B550-F GAMING BIOS 3002 is your current latest bios.
Last, but not least, update your video card drivers.
Select your version of windows and download and install AMD Software: Adrenalin Edition. Sometimes you have to make sure AMD graphic drivers were not replaced by the ones from windows update. This is a known issue I always have to deal with. If you open up the Adrenalin software and it gives you an error of something like mismatched driver version and refuses to open, windows update downgraded it to a very old version. This may potentially be the case and potentially be the culprit.
